  • 1 1/2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 cup milk

Instructions:

  1. Preheat your oven to 350°F (180°C) and grease and flour two 9-inch cake pans.
  2. In a medium bowl, whisk together the ground cashews, flour, baking powder, and salt.
  3. In a separate large bowl, beat the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Beat in the vanilla extract.
  6. Gradually add the flour mixture, alternating with the milk, and mix until just combined.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center of the cakes comes out clean.
